    1st Course
    La Doña: Traditional rabbit “barbacoa” taco, country “quelites”, smoked salsa and coriander sprouts.
    2nd Course
    Chef Daniel Nates: Zuchini salad, pistachio, sheep cheese, yellow lemon and mint.
    3rd Course
    Chef Daniel Nates: Roast cauliflower, white “mole”, black “mole” and black truffle.
    4th Course
    La Doña: Fish in wild mushroom textures and candied celery bulb.
    5th Course
    Chef Daniel Nates: Loaded rib, pickled “tuétano”, poblano veil and red wine vegetables.
    Palate Cleanser: Corn syrup shaved ice and “xoconostle”.
    Dessert
    La Doña: Chai tea mousse, corn ash “atole” vanilla ice cream and “hoja santa” strudel.
